So this week I had the pleasure of starting my lady days AND getting sick on the same day! Not only that but we’re also in lodging now so we don’t have our usual kitchen supplies with us. I had some tea with honey and some hot lemon water last night and this morning until the commissary opened to get some soup supplies! I looked up a few different recipes to get a sense of what would be a good mix because I have yet to make good veggie soup until today!
Carrots, 3 medium
Celery, 3 stalks
Onion, 1/2 large
Mushrooms, 2 cups
Garlic, 3 cloves, minced
Ginger, 1 thumb, chopped or grated
Oil, 1 tbsp (I used Coconut Oil)
Veggie Base, 4 tsp
Green Tea with Lemon, 2 bags
Pasta, 1 box or bag
Water, 10 Cups
Optional: Hot Sauce and Crackers
So I was pretty hesitant about the green tea in the soup but you can barely taste it and its supposed to be really good for healing!
Heat the oil in a stockpot with the minced garlic. Add the carrots, celery and onion with a little salt and pepper (I used 1 each of the single serve packs you get at some fast food places). After the veggies have softened add the mushrooms and continue cooking until they begin to cook through. Next add the water, veggie base or bouillon, green tea bags and ginger. Bring the soup to a boil then add the pasta and heat until pasta is cooked through. I added just a few drops of hot sauce in the end just to help clear my sinuses a bit more.
Next time I’ll use less of the veggie base so theres a little less sodium in it. I also really didn’t measure much so you can wing it as much as you want. Change the pasta, add different veggies, make your own broth! Hope you enjoy it ❤
