Chocolate Banana Cupcakes

These things are amazing! I made them for May’s Jurassic Park Date Night and they’re just as good every time I make them. I got this recipe from theprettybee but these measurements are just a little bit different and I make these into cupcakes rather than a loaf of bread. Here’s what you need…


Dry Ingredients

1 1/4 Cup Flour
1 Cup Sugar
1/2 Cup Cocoa Powder
1 tbsp Baking Soda
1/2 tbsp Baking Powder

Wet Ingredients

2 Ripe Bananas
1 Cup Water
1/3 Cup Coconut Oil, melted
1 tbsp Vanilla Extract
1 tbsp Apple Cider Vinegar


Vegan Frosting



Mix your dry ingredients together in one bowl. In another bowl, mash up your bananas and mix in the rest of the wet ingredients. Make sure your measure the coconut oil solid then melt it in the microwave completely. Combine the wet and dry ingredients before the coconut oil has a chance to solidify again.


Bake on about 400 °F for about 15 minutes for very soft cupcakes or a little bit longer if you like. Let them cool for a bit once they come out of the oven and top with a vegan frosting or mix them up in some vegan ice cream!
